
Indonesian Chicken Soup Recipe
Alright, let's talk about making some awesome Indonesian Chicken Soup (Soto Ayam)! Here's what you need:
Ingredients:
- 500 grams of chicken
- 250 grams of chicken feet
- 3 bay leaves
- 3 kaffir lime leaves
- 2 stalks of lemongrass (give them a good crush)
- 1 tomato (cut into medium-sized pieces)
- 2 ounces of green onions + celery (slice them about 1/2 cm thick)
- 6 cm galangal (give it a good crush)
- 2 liters of water
- 5 tablespoons of oil (for sautéing the spices)
- Salt to taste
- Sugar to taste
- Seasoning to taste
Spice Blend:
- 6 shallots
- 4 cloves of garlic
- 4 candlenuts
- 1/4 teaspoon ground pepper
- 5 cm turmeric
- 4 cm ginger
Additional Goodies:
- Fried shallots (as much as you like)
- Bean sprouts (however much you prefer)
- Finely chopped celery (1 stalk)
- 1 lime, cut into 6 wedges
- Soy sauce chili paste (add to your liking)
- Rice vermicelli (optional – I personally skip it)
- Chinese cabbage (optional – again, it's up to you)
- Shrimp crackers (as much as you want)
How to Make
Step 1
Boil 1 liter of water, add the chicken and chicken feet for about 10 minutes, set aside the water for the soup.
Step 2
Blend the spices, then add crushed lemongrass, kaffir lime leaves, and crushed galangal.
Step 3
Heat some oil, sauté the spices until fragrant, then turn off the heat.
Step 4
Slice the tomatoes and also chop the green onions and celery, set aside.
Step 5
Prepare a pot, heat 1 liter of water and add the boiled chicken broth. Add the chicken feet, pour in the sautéed spices, add bay leaves, sugar, salt, and seasoning. Wait for it to boil, then add green onions and tomatoes. Adjust the taste, and when it's just right, turn off the heat and add fried shallots.
Step 6 Put the previously boiled chicken into salted water, fry until golden brown, shred it into small pieces. Prepare bean sprouts, lime wedges, fried shallots (if they're not already in a jar), and don't forget the soy sauce chili paste and shrimp crackers – customize your soup!
